Heya. Guess what!! I created my first own recipe today! I was thinking of a delicious lunch I had at a vegan restaurant the other day and I wanted to try something similar.
So I quickly discussed with my mum how & what I could make and then I started throwing everything we had at home into a pot. Why I am writing this long introduction?! Because of course, it turned out to taste hilarious and that's why I want you guys to know how to make this super delicious veggie stew with beluga lentils and basmati rice.
Put on an apron & let's get started!
What you'll need:
basmati rice (or any rice you like)
beluga lentils
1/4 of an onion
1 clove of garlic
a dash of sunflower oil
1/4 of a fennel
a piece of ginger
2 carrots
3 sticks of green celery
4 cherry tomatos
a dash of tomato puree
mother cumin (which is life!!)
vegetable stock powder
It looks like a long list but it's actually super simple and quickly done!!
What you'll do:
1 first of all, get your lentils and rice cooking because those take the longest
2 chop your onion and garlic and get them sweat in the sunflower oil (or just water)
3 then add the carrots as well as the fennel, ginger, celery, mother cumin and vegetable stock powder; it is important to add the spices at the beginning because only then it will taste it's best!
4 when all the veggies (except the tomatos) have steamed a bit, add your tomatos and wait for another 2 or 3 minutes
5 then add a dash of tomato puree (depends on how tomato-ey you like it to be) and let it cook for a few minutes
6 add a bit of water and put everything into your food processor and blend until smooth
7 if you like, put some of your beluga lentils into the soup itself or leave them for scooping separately
8 serve with some greens on top &
